Leek & Butternut Pumpkin Cannelloni
We have had a packet of cannelloni pasta in our kitchen for months, left by our previous housemate - I finally got around to using them. I had never cooked with them before, so I went with a recipe I found on the BBC food website. I found the recipe too rich - I would suggest using either the ricotta filling or the cream sauce, not both. (Actually I’m never a fan of cream sauce, I’d prefer a tomato-based option any day!). The pumpkin and leek combo was beautiful.
